The Barossa produces large amount of Chardonnay, but it is not known for Chardonnay but Shiraz. In 2011, we were blessed with a cool and wet vintage that created the perfect conditions for the maturation of white fruit. We hand picked the Eden Valley Chardonnay at 11.8 baume with the goal of producing a crisp clean style of Chardonnay. The free run was run into old French oak barrels for fermentation and lees maturation. After several months on lees the wine was racked and bottled. Now, four years later the acidity has softened and while still young, this wine is perfectly matched to grilled seafood and barbequed white meats. Serve at 8 degrees.
